CHILLI PANEER STIR FRY
This is a recipe I developed last minute for a Sunday morning food demo. It was right after my first book was published and I was cooking at quite a few food festivals at the time. I returned home late one Saturday evening to find my 18-year-old son drinking beer and serving up a feast to friends with all the prepared ingredients I needed for the following morning. I could have killed him but that would have been illegal! Fortunately, I still had enough chicken and base sauce for the chicken tikka masala I had planned but the chicken jalfrezi wasn’t going to happen. I had the following ingredients on hand and decided to make this restaurant-style chilli paneer.
